Project Car

I want to start my first project car. Sounds simple but where do I start, I haven't done much mechanical work but am willing to try anything with the help of youtube.

I would prefer something easier to work on and reliable as I wont be taking it to the extreme as it will be a daily driver. Needs to have more than 2 seats but not worried about 4/5 doors. budget is really 2k-3k but can stretch that for the right car.

What would people recommend and why?
